Evelyn Vitz Evelyn (Timmie) Birge Vitz is Professor of French at New York University, and Affiliated Professor of Religious Studies, Medieval and Renaissance Studies, and Comparative Literature. She has been thinking, talking, and writing about food-and cooking!-for many years. Mrs. Vitz lives in New York City with her husband, Paul C. Vitz. They have six children-and a growing number of grandchildren.
